All the good things about these cookies:
- You use one bowl so that means easy clean up
- They're gluten free and vegan with no added crap cookies usually have
- You can add whatever combo of ingredients you want to the base - like chocolate for example
- Most ingredients you will have already
- The dough is edible
All the bad things about these cookies:
- You will burn your tongue because they are best right out of the oven
- There's nothing bad about them really
Preheat your oven to 350. Line a baking tray with parchment paper. Get a big bowl and all your ingredients.
1/2 cup oat flour (you can throw oats into a food processor until it makes flour)
1 cup oats
1/2 cup almond butter
1 tbsp coconut oil
1/3 cup date syrup - all natural sweetener that's lower in sugar than others
1/4 cup chopped walnuts
1/4 cup slivered toasted almonds
3 tbsp goji berries
1/2 tsp baking soda
dash of cinnamon, vanilla, and salt
Use a cookie scoop to form the cookies and make sure to press them down! Spread them out since they will get bigger. Bake for around 15/16 minutes or until the tops are a little golden. Allow them to fully cool before you store them in an airtight container. Make sure to try one warm and don't burn your tongue. Enjoy!
